Spooktacular (doughnut) Bats

Super simple Halloween treats!
They're fast and easy--perfect for that treat/snack you forgot to make for a school/sports/dance party.
Run to the store-get the stuff and whip these up!

Ingredients:
Chocolate covered doughnuts (I used Entemanns mini chocolate frosted doughnuts)
Broken Nabisco Chocolate Wafers (broken in half)
Chocolate frosting (for glue)
Candy eyes

Fang options:
Slivered almonds, sprinkles, chocolate covered sunflower seeds, cut mini marshmallows and flattened vanilla Tootsie rolls.

Break the wafer in half and stick a wing on either side of the doughnut.

Your choice for fangs:
If using almond slivers or chocolate covered sunflower seeds- just shove them in the doughnut.
OR
If using sprinkles-poke 2 holes with a toothpick and add a sprinkles in each hole.
OR
If using mini marshmallows-cut fang triangles from a mini marshmallow and attach with dabs of frosting.
OR
If using a vanilla Tootsie roll-warm a roll in the microwave for 10 seconds then flatten it with your fingers.
Cut lots of fangs from the candy using (clean) scissors.

Attach with dabs of frosting.

Add the candy eyes with dabs of frosting (I just dip the back in the frosting and stick them on).

Break 2 triangles from a wafer and add to the top of the doughnut to make the ears.

Ta-da!
You're done!

Doughnut Bunny

We actually eat a lot of fruit and vegetables but I think in doughnuts- what can I say? They're round and they can be cut apart and made into so many different things! But I always try to use cake doughnuts, not frosted ones (unless it's dirt bike cake and needs boulders-then nothing but chocolate doughnut holes will do) so at least there is some moderation. These little bunnies only use a half a doughnut each - so they're even healthier. Right?

Materials:
1 cake doughnut
White frosting
Sweet flaked coconut *chopped extra and sifted
Marshmallows
Pink sanding sugar
Pink dot candy
Mini chocolate chips
Sprinkles

Special equipment:
Scissors
Tweezers
Frosting knife
Spray oil

*Prep the coconut- I chopped ours a little  in the food processor as my bunnies were looking hairy – not fuzzy; then I sifted out the sugar dust. You can substitute shaved white chocolate if you don’t like coconut.

Prep the scissors – spray a little oil onto the blades then wipe it off; this will prevent the marshmallows from sticking. You may need to wash and reapply if you’re cutting a lot.

Cut the doughnut in half.
Cut a laid back L shape from the top of one half.
Cut 2 slices away from the front on either side to create the bunny nose.

Frost all but the uncut parts of the doughnut (skip the bottom).

Carefully frost the cut sections (then you won't get crumbs in your frosting).

Set the doughnut into the coconut and cover it completely- you can pat the coconut on too.
Pick the doughnut up and set it aside (I thread a chopstick through the bottom middle and transport it to the tray).

Use the oiled scissors to cut a marshmallow in half on a diagonal, then cut each half again to make 4 sections:  2 ears, one tail and an extra bit to pop in your mouth.

Dip the sticky side of the marshmallow ears and tail in the sanding sugar so they pick up the sugar.

Then dab a bit of frosting to the back of each ear and attach to the front ledge of the face.
Dab frosting on the tail and add it to the bum.

Stick in the chocolate chip eyes and add the nose with a bit of frosting-you might need tweezers to add the sprinkle whiskers.

I tried a lot of different whiskers- chowmein noodles, licorice, potatoes sticks, uncooked pasta (ugh!) and at the end of the day these little sprinkles seemed just right.
But they are tedious to get in there- choose the longest ones!

Doughnut Cake

Please understand- I'm a Cook's Illustrated kind of gal all the way - all 40 ingredients and 80 steps (love this video). But for work - sometimes I go fast; cut corners, buy refrigerated sugar cookie dough, use canned frosting and food coloring.
I do. Sigh.

But this is not for work. This is for my boy who loves doughnuts; however, I broke my rules and used food coloring to give it a 4th of July kind of twist.

Gather:
3 cake doughnuts
White frosting in can
Red and Blue food coloring gel

Add a little food coloring (remember to use a clean toothpick to go into the food gel so you don't contaminate it) to 2 little bowls of frosting.

Slice the doughnuts (as fresh as you can get them) in half lengthwise.

Practice stacking the doughnut halves with one flat half on the bottom and the other half up on top.

Add the frosting - I layered it in red, white and blue but you do what ever you like.
Put it in the refrigerator to set up for 15 minutes or so- it was 90 degrees in the kitchen when I made mine so it was pretty goopey.

Frost the outside.

Add sprinkles.

Lots of sprinkles.

Then break out the good Lego silverware.
